Bananas are one of your 5 a day and a great source of potassium. They are also required to be consumed for this quest.
Bananas are found dropped from palm trees and from searched produce boxes. Palm trees are mostly found on the islands surrounding Coral Castle. Produce boxes can be found all over the map.
